Good Friday Meal: Nigerian Frejon Recipe

Happy Good Friday to you all my lovelies. Today is one of the most significant days in the Christian calendar and as with all traditions, food plays a major role.

What menu plans do you have for Good Friday? Our recipe for today is Frejon. Although not popular in the country, it is a super delicious Easter recipe traditionally eaten on Good Friday

The name Frejon was derived from the Portuguese word feijao, meaning beans, so you now have an idea of what Frejon dish might consist of.

Frejon is a smooth paste like pudding made from black beans (Ewa Ibeji though scarce at times so try black eye beans which is a good alternative), coconut milk, and white sugar (optional).

This Easter Friday meal is eaten especially during the Holy week by a selection of Christians, mostly Catholics because dairy foods and meat are not supposed to be eaten on Good Friday.

Frejon originally was brought to Lagos by the returning slaves from Brazil, who settled in the Portuguese quarters in the state. A Good Friday morning meal that is usually served with toasted garri/dried & ground cassava and fish stew.

Good Friday Frejon Recipe

Ingredients

  • 1 cup of Black beans or black-eyed beans
  • 2 cups Coconut milk
  • Water (enough to cook the beans till soft)
  • Sugar (optional)
  • Garri

Preparation

  1. First, wash the beans and boil (without salt) in a medium-sized pot until it softens. Allow the beans to cool.
  2. Then, move the beans into a food blender add 1 coconut milk cup to it and blend.
  3. Finally, transfer the mixture into the pot, add sugar (optional) and let it boil for about 5 minutes to thicken a bit.
  4. Serve Frejon with fish sauce and sprinkle Garri on it.
