How to roast peanuts is very easy. There’s no need to hunt down a street vendor when you can easily make roasted peanuts at home.

Peanuts or groundnuts can be roasted in the microwave, oven-baked, with firewood, and on the stove-top.

Roasted peanuts are a healthy convenient snack, with more intense flavor than raw peanuts, and make ideal snacks for parties and seasonal events.

These peanuts are perfect to take with you on road trips, at the office, for parties, on the go, nibbling while watching the games, on days at the beach, or just grabbing a handful every time you pass by them on the counter.

Known by several names like earth nut, monkey nut, pygmy nut, pig nut or goober peas, peanut or Groundnut as it is called in Nigeria is a member of the legume family along with beans and peas.

These nuts are enclosed in a hard wrinkled outer shell or pod which contains two or sometimes, three kernels.

The seeds are egg-shaped and their size depends upon the cultivar type. The shell has to be broken to eat the seed inside.

Roasted Peanuts/ parched peanuts are fast becoming a staple delicious quick snack and everybody’s favorite.

Nigeria is the third-largest producer of groundnuts in the world and the largest in Africa.

The majority of the more than three million metric tonnes of groundnuts produced annually in the country are roasted and sold locally in used bottles, as snacks.

It’s very common to see hawkers carrying roasted groundnut, dank, and popcorn on their heads.

This healthy snack is also a popular accompaniment to roasted plantain (Boli or Bole as it is called), bread, garden egg, biscuits, cucumber, garri (drinking), etc

Being rich in a variety of nutrients like Vitamin E, folate, niacin, manganese, and protein, peanuts are considered a cheaper substitute for other nuts like almonds, pistachios, cashews, pine nuts, and walnuts.

They are available in salted, dry roasted, boiled, and raw forms.

Being extremely versatile, they are often used as an ingredient in peanut butter, candy bars, chocolates, or even sold in the form of ‘chanas’ and ‘chikkis’ by roadside vendors.

The good news is that they can be safely consumed by people who are allergic to nuts since peanuts are not nuts but legumes.

Raw or roasted peanuts are nutritious food. In addition to protein, they provide biotin, copper, manganese, niacin, molybdenum, folate, vitamin E, phosphorus, and vitamin B1.

Even though they are not tree nuts, they have the beneficial effect seen on cholesterol that is provided by tree nuts.

It’s very easy to do and it’s hard to beat the flavor of freshly roasted peanuts straight out of the oven.

The biggest concern is the timing because you’ll need to roast those in the shell a little longer than peanuts that have already been shelled.

First, let’s look at the Procedure for making roasted peanuts,

Simple Procedure for making Crunchy Groundnuts
  1. Firstly, pick out stones from your fresh groundnuts, and soak them in hot (Boiling water) for a few minutes or till the water color changes and the groundnuts look pale (Lighter).
  2. Secondly, add salt and spread out on a tray or mat to dry in the sun, oven, or your preferred drying method.
  3. Then, dry until the wetness disappears.
  4. Lastly, roast in a pot or fry pan using your favorite method which I explained below:

There are no tricks to roasting nuts in your kitchen at home. Raw, dried peanuts are the best for roasting.

Dried peanuts can be shelled or unshelled, it is better to use unbroken and unblemished shells.

Here are four simple methods of making Nigerian roasted / fried groundnut.

There may be other methods out there but here in Nigeria, these four methods are what groundnut sellers use that I know.

Methods
  • With sand – sandy soil leaves the peanuts neat and attractive
    Without sand (using garri)
    With table salt
  • Ashes

The 3rd and 4th methods are not commonly used because most people do not like very salted groundnuts and ashes usually leave some powdery effect on the hand each time one takes the peanut and that can be messy.

Recipe Note:

Fine sand is the most popular locally used to roast groundnut.

Though garri is the best way and healthier it can get burnt on high heat, making the groundnuts burn also.

Therefore, when using garri to fry groundnuts, always make sure that the fire is on a medium setting to enable the groundnuts to fry evenly without getting burnt.

How long to roast peanuts depend on the method you are using, whichever method you use, the process of getting the final product to be crunchy is the same.

Instruction
  1. Firstly, heat an empty pan on the fire and add garri, allow the garri to heat up slightly before adding the peanuts.
  2. Secondly, use a wooden spoon to keep stirring. Stir consistently to allow for even cooking and to avoid burning.
  3. After that, the peanut would start to make a crackling sound like popcorn.
  4. Fourthly, keep stirring till the sounds stop and the skin looks like it is dried up.
  5. You can then, pick one nut and peel and taste, if it still tastes raw, keep stirring.
  6. Next, continue checking to see the progress, if you peel the skin of about 3 picked randomly and it comes out golden brown then, it is time to take it off the heat.
  7. Lastly, allow cooling in garri before you pour it into a large perforated sieve, sieve to separate garri from the peanuts.
Please Note

If the groundnut is almost overcooked or roasted quickly remove it from the garri as it would keep cooking even after it has been taken off the heat.

Then, allow cooling completely then peel, and store in an airtight container.

Side Effect / Caution

According to Clark Sam J. Penaflorida, Peanuts are great sources of energy that come with a variety of benefits.

However, they should be consumed in moderation as excessive consumption may lead to gas, heartburn, and sudden food allergy.

Peanut allergy is one of the most serious food allergies and allergic reactions can be life-threatening.

If you suspect that you have a peanut allergy, it is advisable to get tested by an allergist and avoid peanuts, and other peanut products if the allergy is confirmed.

Peanuts are also prone to contamination of aflatoxin produced by a fungus, aspergillus flavus which is highly toxic and carcinogenic and can contribute to liver carcinoma.

A peanut having a greenish-yellow appearance is dangerous and hence, should be avoided.
