The word’s etymology doesn’t do it any favors: “slumgullion” is believed to be derived from “slum,” an old word for “slime,” and “Gullion,” an English dialectical term for “mud” or “cesspool.”

Most of the earliest recorded usages of “slumgullion,” such as in Mark Twain’s Roughing It (1872), refer not to a stew but a beverage.

The sense referring to the stew debuted about two decades later, and while there is no consensus on exactly what kinds of ingredients are found in it, that’s the “slumgullion” that lives on today.

The history of this traditional dish seems to be that it came from the slums of England before the turn of the century. There was no recipe recorded because back then very few knew how to read or write.

It was handed down to the kids by showing them how to make it. There was no basic recipe, they just used what they could find or had then which was not much meat so if they had some rats or mice or sparrows or pigeons whatever they used it.

Later in years, it was called MULLIGION in some areas, and then it was served over mashed potatoes or put in a shell pastry and called a MULLIGION pie.

Just like the old saying goes 5 and 20 blackbirds baked in a pie. They also used to put it on toast or whatever they had.

Slumgullion Ground Beef Recipe | How to Make Slumgullion

This vegetarian recipe is a family tradition.

  • 1 lb. Ground meat
  • One med. Onion, diced
  • 1 lb. Can tomatoes
  • ¼ tsp. Pepper
  • 1 (8 oz.) Can tomato sauce
  • A cup of macaroni, heaping
  • 1 tsp. Salt
  • Shrimp (optional)
    Method
  • Firstly, in a large skillet, cook ground meat and onions. Then, when meat is done, drain excess grease.
  • Secondly, in another pan, cook the macaroni. Crush the tomatoes and add them alongside the sauce, macaroni, salt, and pepper to the meat and onions in the skillet.
  • Finally, allow the whole mixture to simmer until some of the juice from the tomatoes cooks away.

Serve with potatoes, beans or even rice
