Dish: Cameroon Chin Chin

Region: West Africa

Ingredients:

  • 7 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 5 tablespoons salted butter or margarine
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 can (5.4 oz) evaporated milk
  • 500ml cooking oil for frying
How to Make Chin Chin Dough

Note: This recipe uses a food processor, but you can also mix the dough manually in a bowl.

  • Add the dry ingredients (flour, baking powder, sugar, and nutmeg) to the food processor. Mix on low speed for 30 seconds, then stop.
  • Add the butter and mix on medium speed until well incorporated.
  • In a separate bowl, whisk together the eggs, vanilla extract, and evaporated milk.
  • Pour the liquid mixture into the food processor and mix on medium speed until a dough forms.
  • Divide the dough into four equal parts, wrap each piece in plastic wrap, and refrigerate for 30 minutes.
Rolling and Cutting the Dough
  • Lightly flour a clean surface and roll out the dough to about 1 cm thickness.
  • Cut the dough into 1-inch strips, then further cut into your desired Chin Chin shapes.
  • Place the cut pieces on a floured tray and set aside.
Frying the Chin Chin
  • Heat 500 ml of cooking oil in a deep pot over medium heat. Note: Always monitor the oil to prevent overheating or combustion.
  1. Add the Chin Chin pieces in batches and fry for about 5 minutes, or until golden brown.
  2. Remove and drain on a paper towel-lined bowl to absorb excess oil. Allow to cool.
Serving and Storage

Once cooled, enjoy your Chin Chin with a favorite drink! Store any leftovers in an airtight container to maintain freshness.
