How to prepare fried plantain and egg sauce

Ingredients

  • 2 ripe plantains
  • 4 fresh tomatoes
  • 3 eggs
  • 4 scotch bonnet peppers
  • 1 medium onion
  • One Seasoning cube
  • Vegetable oil for frying
  • salt to taste
Method of Preparing Easy Egg Breakfast
  • First and foremost, wash your plantains to remove any dirt or sand from the surface. After that, peel the back and cut it into the desired shape and size.
  • Meanwhile, wash the tomatoes, onions, and pepper, then finely slice them on a platter and set away for later use.
  • Thirdly, in a frying pan, heat your vegetable oil, sprinkle salt over the slice plantain, and stir to combine.
  • Stir the plantain into the hot oil till it gets golden brown, then take it from the fire and pour the oil in a strainer.
  • After that, lower the amount of oil in the frying pan, reheat it, and add the sliced onions; stir fry for about 30 seconds before adding the tomatoes and pepper.
  • Cook for 3-5 minutes, then season with salt and pepper to taste, whisk the eggs, and pour into the frying pan.
  • Finally, stir for 2 minutes to fully incorporate the tomato stew, then remove from heat to complete your quick egg breakfast.
