When we have an abundance of onions, we always make some into powder for long-term storage. To be honest, I think onion powder is my favorite of all our homemade seasonings.
What are the three different types of onions used in cooking?
Here’s what you need to know about the three most common types of onions.
- White Onion. These are usually the mildest of the onion varieties, so we like to use white onions in salads and on sandwiches.
- Yellow Onion. You don’t want to eat a raw yellow onion.
- Red Onion. Sweetness is the red onion’s greatest strength.
Onion powder made from scratch
Powder onion is one of my go-to low-effort food seasonings for days when I don’t feel like chopping onions.
Not to mention that it is tear-free, and homemade versions will avoid any harmful additives found in store-bought alternatives.
Furthermore, homemade onion powder is an excellent way to preserve large quantities of homegrown (or store-bought) onions, and it is less expensive, tastier, and contains no preservatives, fillers, or anti-caking agents!
Recipe for Homemade Onion Powder
Well, I’m happy to report that this onion powder recipe only requires one ingredient: onions!
Unlike store-bought onion powder, you know that your homemade onion powder contains only fresh onions.
In this recipe, I used red onions, but you could use any type of onion.
Onion powder contains no hidden ingredients. You only need a few fresh onions.
Preparation
- Begin by peeling your onions and finely chopping them with a sharp chef’s knife.
- Spread the onion slices on a baking sheet and then, bake at 150°F or dehydrate in a food dehydrator until dry.
- When the onions are done, you should be able to easily crumble the chopped pieces in your hand.
- After that, allow the dried onions to cool before pulverizing them.
- They’re simple to grind with a coffee grinder, spice mill, food processor, or mortar and pestle.
- Lastly, continue to grind the mixture until it reaches the desired consistency.
Onion Preservation ~ How to Store
The onion powder should be kept in an airtight spice jar in a cool, dry place, such as a kitchen cupboard.
This powder can be kept indefinitely if properly stored, though the flavor will begin to fade after about a year.
To avoid clumping, shake the jars for the first few days after dehydration to break up any errant clumps, and optionally place some uncooked rice or beans in the jar to absorb any extra moisture.

Onion powder vs. onion ~ onion to onion powder
Onion powder is essentially ground-dried onion. Although dried onions only contain onion flesh, onion powder may also contain dehydrated onion skins and roots.
Because onion powder is three times more potent than dried onion, you would only need one tablespoon of onion powder to replace one cup of fresh onion.
