Easy Banana Bread Recipe from Scratch
Easy Banana Bread, also known as Banana Cake is a type of bread made from mashed ripe bananas. It is so easy to make and super soft and moist!
No need for a mixer! Or to knead like the regular bread recipe. All you need are ripe bananas, butter, sugar, egg, vanilla, baking soda, and flour.
The banana season is here in Nigeria, you hardly pass any junction in Lagos without seeing the succulent ripe bananas calling out to pick them up.
The taste is so lip-smacking, and the best part is that the aroma won’t leave your kitchen soon.
The best bananas to use are those that are over-ripe. Not rotten Bananas, just overripe.
Banana bread is a super tasty and great way of using up overripe Bananas instead of just throwing them away.
Letting your bananas ripen even longer – until the skins are brown and the fruit falls apart when you peel it – will make your bread even more strongly banana-flavored and richer.

Easy Banana Bread Recipe
Ingredients
- 2 to 3 very ripe bananas
- 1/3 cup melted butter, unsalted or salted
- 1 teaspoon baking soda
- 3/4 cup sugar (½ cup if you would like it less sweet, 1 cup if more sweet)
- 1 large egg, beaten
- Pinch of salt
- 1 teaspoon vanilla extract
- 1½ cups of all-purpose flour
Method
- Firstly, preheat the oven to 350°F (175°C), and butter a 4X8 – loaf pan.
- Secondly, mash the ripe bananas with a fork in a mixing bowl until completely smooth. Then, stir the melted butter into the mashed bananas.
- Thirdly, mix in the baking soda and salt. Gently, stir in the sugar, beaten egg, and vanilla extract then combine well with the flour.
- After that, pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
- Lastly, remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving.
Note: For banana nut bread, add ¾ cup of chopped nuts (pecans or walnuts) to the banana bread batter.
Whether it’s for teatime or a simple dessert, you can serve healthy Banana Bread with fresh whipped cream, though it’s more than good enough to eat it as is.
Can You Freeze?
Yes! If you’d like to freeze banana bread, then allow it to cool completely at room temperature on a plate or wire rack once it comes out of the oven.
Once cool, wrap the bread in plastic wrap, then wrap in foil. Freeze the bread for up to 2 months for best results.
To thaw the bread, remove from the freezer and allow it to come to room temperature, covered on the counter. This will take about 24 hours.
