Fufu is simple to prepare but extremely tasty. It is served with a rich and flavorful soup or stew, such as egusi soup, okra soup, ewedu soup (Jute leaves), or light soup.

It goes well with soups, stews, and proteins because it is easy to swallow and does not require chewing, making it a food that people of all ages can enjoy together.

In some parts of West Africa, fufu refers to any swallow that is served with the local soup.

Though traditionally made from cassava, fufu’s definition has broadened over time to include eba, green plantains, amala, cocoyam, corn, pounded yam, semolina, and other swallow foods.

When you order fufu in Nigeria, you will be served cassava fufu, which is also known as akpu or Santana depending on where you are in the country.

Cassava, also known as yuca, is used to make fufu. Sweet potatoes, russet potatoes, and yams are all starchy root vegetables.

It can be fried, baked, and prepared just like potatoes, but when made into fufu, it becomes very smooth, doughy, and elastic.

This staple food is known as fou fou, foo foo, fo fo in other west African countries such as Cameroun, Ghana, Sierra Leone, Congo, and Senegal.

The process is the same regardless of where it comes from if it is made from cassava pulp.

  • Using a potato peeler or a knife, peel the cassava skin.
  • Peel the peeled tuber and cut it into small cubes that can be blended easily.
  • Blend until you have a nice, smooth batter.
  • Transfer to a pot and vigorously stir until the fufu is thick and smooth, like a semi-solid paste. So, where do we go from here?

Pinch a small piece of foufou and roll it between your palms to form a small oval ball.

Fermented fufu isn’t my favorite, but some people adore it. It’s only one more step, but you’ll need to start planning it a few days ahead of time.

Simply soak the peeled and diced cassava in water for three to five days before making the fufu. That’s it! Every other step is identical.

Because of the fermentation, it will have a stronger smell than its usual mild starchy aroma.

Note: Because fufu hardens as it cools, it’s best to cook it on the softer side if you’re not going to eat it right away.

How to Make Fufu from Scratch (Nigerian Fufu)

Here’s a quick rundown of how to use fresh produce to make cassava dough for fufu.

Peeled cassava is chopped into chunks. It’s then rinsed and submerged in water, covered, and left to ferment for 3 to 5 days outside.

This method also aids in the removal of toxins and excess starch from cassava.

While I understand that leaving the cassava outside to ferment may not be practical, it is necessary due to the sharp and pungent smell that the cassava emits while fermenting.

If you use an airtight container, this should be fine. Drain the water from the cassava after five days; the cassava will be soft to the touch.

Put it in a blender with a little water to help it blend, and blend until smooth. Repeat the process until all of the cassava has been consumed.

Squeeze out all of the moisture from the pureed cassava using cheesecloth. You can save it for another day by hanging it over a bowl.

Your placali (water cassava) is ready to use.

Making fufu from scratch at home is not for the faint of heart, I must say.

It takes some effort, but it is well worth it, particularly if you live in the diaspora.

Because of the time and effort required to prepare it, it is not something I will make every week.

However, when I’m in the mood for something nostalgic, I make it.

Step 1: Place the cassava dough/pulp in a heavy-bottomed pot and break it up with your hands into smaller pieces.

Add the water and mix with your hands until the paste is lump-free and smooth. It would have the consistency of thick double cream.

Step 2. Turn the heat to medium-low and begin vigorously stirring; the fufu will begin to change color from white to off-white.

To combine everything, keep stirring. At some point, the fufu will become difficult to stir and stretchy, so add warm water to the mix as needed.

Cover the pan pot with its lid and cook for 5 to 10 minutes to allow the steam to thoroughly cook the fufu and achieve the desired softness.

When the fufu is no longer white and the final product is off-white in color, you know it’s done.

Cooked fufu should be portioned into bowls or wrapped in cling film until ready to use. Serve with your favorite soup.

  • Stir once more, then divide into individual portions and wrap in plastic wrap.
